It is equipped with the most advanced technology. We can vinify white wines in excess of two million kilos. We ferment in stainless steel tanks, with a controlled temperature below 17ºC. This allows us to obtain fresh, fruity, harmonious and elegant white wines. We vinify each of our varieties separately, to obtain the maximum of their potential.
To make our Barrel Fermented Verdejo, we use oak from various cooperages. The result is a wine that respects the fruitiness of young Verdejo, but with greater complexity, glyceride and a good balance between acidity and alcohol content.
We continue to maintain and use the old underground cellar, which belonged to the Church in ancient times and where the grapes from the collection of tithes were stored. The connection with wine in these lands dates back to ancient times. An extraordinary testimony is our underground cellar. An authentic jewel of popular architecture from centuries past.
It is an underground cavity that descends to about 15 metres. A network of galleries lined with bricks shelters enormous oak “vats” (with a capacity of between 250 and 500 jugs) in which the wine was made and stored.
An ingenious ventilation system, based on vents on the outside, allowed the spaces to be ventilated and toxic gases to escape when the musts were fermenting.
Our wines are produced and bottled at source from grapes grown in our own vineyards. They are known both in Spain and abroad for their elegance, richness of fruit and balanced acidity.

We have recently installed, on the roof of our factory at Calle Juan Antonio Carmona No. 12, a self-consumption photovoltaic plant with surpluses eligible for compensation, with a power of 85.05 kWp. Carried out with a total investment of: €68,000.00 and with a grant received of €25,480.00. Project included in the program of incentives linked to self-consumption and storage, with renewable energy sources, as well as the implementation of renewable thermal systems in the residential sector within the framework of the Recovery, Transformation and Resilience Plan, financed by the European Union – NextGenerationEU Royal Decree 477/202
